Any recs for an oil that is liquid at room temperature that won't solidify in the fridge? like if I want to make salad dressing ahead of time and keep it in the fridge. EVOO and avocado oil will solidify and has to be left out to warm up for a while. I'm trying to avoid veg oil, corn oil and other seed oils.

Perhaps something lemon-based instead of an oil?

Mix whatever you prefer (something sweet, salty, sour and some olive oil), and pour some olive oil on top to create a layer of film. This will block oxygen from oxidizing some ingredients and it can be kept outside of fridge for a week easily (probably won't have the chance to last this long anyway). Shake before use and top up oil on top after using. Same goes for sorting larger batches of pesto - make it flat and cover with oil.

Or just pour some lemon juice and olive oil onto your salad - works wonders sometimes.
