Symphonic metal is one of several subgenres of metal I think you'd enjoy. Power metal also tends to be less harsh. Not all metal has to use features of subgenres like thrash or black metal, as a couple examples. I don't like harsh vocals unless they're used sparingly.
Antti here makes wonderful epic soundtrack music that frequently incorporates metal that I don't think would bother your ears
