I have not watched Fallout yet, but it is my favorite game series and I'm looking forward to watching it soon.

I haven't played the most recent release. You can definitely jump in at Fallout 4, though.
However, I'd recommend starting at Fallout 3. It's a better game in my opinion.
You can jump in pretty much anywhere.
(Just beware that the show is not part of any game story arc)
The lore itself has plenty of YouTubers that have fun explaining it.
You could always start at the beginning with the isometric view pc games from the 90's. In a number of ways, they were better from the story line aspect.
