I'm trying to avoid all of that; I'm not trying to open a restaurant. What I want to do won't be open every day. Once a month(-ish), reservation only, small groups, 8 ppl max.

My dinners will be more expensive than an avg restaurant, and I won't have a menu - chef's tasting plates only. I'm not trying to make this my career, just an artistic expression and service to others.
