I'm trying to avoid all of that; I'm not trying to open a restaurant. What I want to do won't be open every day. Once a month(-ish), reservation only, small groups, 8 ppl max.
My dinners will be more expensive than an avg restaurant, and I won't have a menu - chef's tasting plates only. I'm not trying to make this my career, just an artistic expression and service to others.

There is this nice place called the Ravenwood in Berkeley springs WV that is of this nature.
Fancy places like this do well in resort areas.
The Ravenwood does have performances along with the fancy meal.
