Why don’t the iOS mobile apps support nprofile? Most of the web apps seem to, which is good. I just checked all the nostr iOS apps, nos included, and none support looking up users via nprofile. Using nprofile for sharing contacts is good because it embeds the relay information and lets us work with a less centralized relay network.

Good question; next is: “Can you solve this?!”.
Even Twitterl has that: if you get a twitter link you cannot open it on the mobile app by pasting it to the search bar. I was always puzzled by that.
Nostr is still in so early dev phase that I often find it a struggle to paste npub, nevent1 etc. The workaround has been to learn by heart the path syntax of the various clients. Hopeless, in mobile apps.
Iris had implemented many of the formats working by pasting into the search bar.
I believe Nostur supports it, at least in the search tab. Seems I have searched for nprofile and nevent using it before. Maybe nostr:npub1n0sturny6w9zn2wwexju3m6asu7zh7jnv2jt2kx6tlmfhs7thq0qnflahe can confirm?
