I love the tallow from bone broth. It tastes better than rendered suet, probably because it doesn't go above water's boiling temp. Thanks!

True! I also love the tallow from slow-cooked meat. I leave some meat pieces in it, which adds amazing flavor to dishes I cook later. Makes sense, right?
