I had a chicken sandwich with freshly baked ciabatta, marinara sauce, and fresh mozzarella.

I used to be intimidated by baking ciabatta because so many recipes call for heavily flouring the surface—meaning the dough has high hydration and is tricky to handle.

Turns out, I didn’t need much flour at all! Just a little water to keep the surface damp, and it worked perfectly.

The result? A nice, crispy, golden-brown crust with a moist, soft, and airy interior—perfect for sandwiches!
