I haven’t delved too far into quantum computing arguments. Where should I start?

Arguments about what? Bitcoin? I wouldn’t worry about it. Resistant algos exist. We’d just switch over.

can Bitcoin just switch to another encryption algorithm?

“Just” is an understatement, but yes if existentially threatened. Quantum decryption is the right kind of threat that would lead to it happening.

My understanding is that it is not even certain if it is theoretically possible to scale quantum computers to large numbers of qbits due to quantum decoherence

Ohh lawd I have some research to do. Quantum decoherence?

Simplified explanation is that as the size of the quantum system grows, it starts to lose it's quantum properties. This means that more advanced error correction mechanisms need to be in place to maintain the quantum states, and there may well be a limit on how large a quantum computing system can be.
