Stainless castiron
Gigi this is no time for your gigabrain… the world is not ready.
Also, cast iron is always stainless when maintained properly (don’t tell Saif)
Too lazy to maintain cast iron. Use occasionally for skillets 🍳
Just never clean it. Leave the oil and food residue in the pan and if you must, wipe some out with a paper towel. Keep it away from water. If setup right in the first place, you never have to "season" it.
Problem with modern cast iron pans is they don't sand down the cooking surface at the factory anymore, and then the wax coat the thing. You then have to melt off the fucking coating and then sand down the cooking surface until it's flat. Then you have to season it. Painful setup. But old castiron doesn't need anything but oil.
Anti-ferrite
It seems about as much work keeping stainless as cast iron. We have both, and I have to periodically use bar keepers friend to the stainless, I never have to do more than a scub under hot water and a paper towel rinse on the cast iron. Cast iron and stainless have different uses imo. The are both equally needed in the kitchen....
