I've never consolidated all my #Bitcoin UTXOs

This morning I ran a test transaction moving .01 BTC into a fresh unused address.

I see that the TX ID pulled sats from 4 of my old wallet addresses.

How does the Bitcoin blockchain work, unless specified, is this a First in First out UTXO system?
