I agree with you but trusting your hardware manufacturer matters too.

Who makes the most secure & privacy preserving device? Apple or Google?

I believe the Pixel 8/ 8 Pro with GrapheneOS is more secure than iPhone with memory tagging enabled.

Relating to privacy that depends how you purcahsed the device, the accounts you log into, the apps you install etc
