I am pretty fascinated by areas of human life dictated by etiquette and not actual rules.

There are clear guidelines. Most airlines and passengers are just too nice to point out other people's stupidity.
i have never seen guidelines.
Nor have i seen an attendant intervene in a way that hinted that they had any idea what they were talking about.
but i believe you.
Air travel is pure fiat. What was once an incredible experience has debased to Greyhound bus in the sky, preceded by the normalization of being treated as a criminal, complete with the humiliation ritual of airport “security”. Boarding the plane begins with a reminder that you don’t have enough to get on the plane first. Not enough money, not enough miles, not enough “status”. Humans are fatter, seats are smaller. If you are 6’ tall there is no leg room without a premium price. So, human behavior? Read the Stanford Prison Experiment and tell me how it ends.
Or that they weigh bags but not passengers
