Interesting! I bet that the groundwater moves a lot slower in the southwest, making more of tea in aquifers vs the NW where there is a ton of hydrological turnover, giving less time to “steep”.

In Scotland, everything is very rocky and it’s all covered in peat moss. So I wonder if peat is very rich in tannins and that’s why their streams look similar.

I’d imagine so. Peat is a big part of our sylvacuture, and it takes some time to drain our property after rain. #BlackTea

The water is customarily used in their finest whiskeys.
