Tannins are from several sources…

Our favorite tannin water is cedar

Interesting! I bet that the groundwater moves a lot slower in the southwest, making more of tea in aquifers vs the NW where there is a ton of hydrological turnover, giving less time to “steep”.
In Scotland, everything is very rocky and it’s all covered in peat moss. So I wonder if peat is very rich in tannins and that’s why their streams look similar.
