I personally like crispy over easy eggs, I cook on high heat to crisp the bottom and use a cover to "steam" it. I haven't used a cast iron yet because I'm so afraid to use one on a glass stove top. I miss having real fire to cook on.
Yeah so that’s how I’ve been making em which I like but sometimes I want more of a poached egg than fried.
