In winter they were kept inside, houses were often just two rooms, house and barn. Not a problem during summer.

there is very little stearic acid in pig fat either, thought it is not bad in other ways

There is lots of steric acid in wild pigs. Farmed pigs are just often fed seed oils and unlike cows pigs can't convert omega 6 to steric acid. So farmed pigs meat might be 20% shit fat. Still better than 80% shit fat that is seed oils.
