What type of customization do you get with that plugin? Iām having trouble vizualizing what sort of template you can do? Like bullet lists? Or automatic link to another note? Stuff like that?

Templater is incredibly powerful - too much so. I use the folder auto template function mostly along with the standard properties function. This allows me to create a note template ("Basic") that has the layout and properties I want for every note that gets created by default notes folder. One of the properties is to apply the date the note was created automagically.
