How do you control their movements?

When we're out for forage the goats naturally follow us around, since they seem to think of us as herd members. They respond to whistles and calls, and carrying a bag of treats always helps to get their attention.
We can't really control where they go, but can influence them by walking in a certain direction. Almost always they'll follow.
Sounds great, I know goats are very loved and valued animals but also notorious for escaping and eating things they aren't supposed to.
I guess you don't have a lot of small trees around, recently planted.
I have friends that have goats in Panama and make soap from the milk.
