get yourself a cast iron pan Jake and ditch the pans with coatings

Something like this
It looks like an induction cooktop. I don't think they work that well with cast iron.
A high quality stainless steel pan is definitely preferable to a Teflon coated pan.
Steaks should be seared at high temperatures otherwise they sweat in the own juices. I'd be concerned with heating Teflon to these temperatures as it tends to burn & release fumes.
Good point, I cook on gas
Love this thread

This pic is in a short-term rental, so I am using their equipment
And nostr:nprofile1qqsfdjrhvhvspvtf7h7a30qeh7tmmrrdzcllg94gn4zuhd72cjxfgvcpr9mhxue69uhhyetvv9ujumn0wd68ytnrdakjuct49uqsuamnwvaz7tmwdaejumr0dshslm2xl5 bang on, it’s an induction, which frankly caused a bunch of headaches and had to be fixed
In our new place, we’re keeping the gas (any newbuild in Melbourne is not allowed to instal gas “for the environment…”) and I love slowly heating a cast iron to then sear a steak, best way to do it
Non-stick pans are classic that. Short term gain (easier to cook with), long term pain (you get sick from the odours, chemicals, and slowly poisoned)

I shouldn't have doubted you Jake! Great thread as you say, I've learned a lot 🧠
