Good choice. I "try" to sharpen some of mine but the result is fair at best. Definitely a skill to it.
Two of these are expensive so I don’t want to fuck them up. But I might mess around with the cheap one 🤔

Yep. Your cheap one is better than what I'm currently working with. A quality chefs knife is in my future.
Start with a Santoku, then try a Gyutou. They offer two distinct cutting styles, but I enjoyed using both so I couldn’t resist buying them!
