5.5 hours in. More misting. Internal temp only went up to 147F. Might be stalling out a little bit. Bumped smoker up to 230F.

165F internally before I wrap it and flip the fat cap on top…
That seems high... I usually shoot for 8-10 hrs in the 120-145 internal range. Takes a little longer but it's sooooo tender.
