Nothing to do with maple syrup. When I butcher pigs, I leave the back ribs on the loin. Hit each side over Hickory fire and then indirect heat from hickory till it hits 120 deg. Pull off and tent for 1/2 hr Rises to 140. Unbelievable taste.
