I love marrow too. I make a great compound butter with it.

How do you make the compound butter if you dont mind sharing

Sure: 1 stick of butter

Marrow from 2 large

roasted canoes

clove of garlic

shallot

Fresh parsley

Salt & pepper

Combine and form into log and wrap in plastic wrap. Refrigerate.
