Unpopular opinion:

Most cooking advice makes meat worse, not better.

Good meat needs:

- fat

- heat

- salt

- time

It does NOT need:

- marinades

- sauces

- herbs

- complicated steps

I'm writing a book built on this idea:

meat, salt, heat, and time are enough.

Would you eat like this?

Or does it sound to extreme?

I like some good seasoning, but other than that spot on I'd say.

If it’s anything like this, go for it. This is a great meat book as well.

What about a rare steak though?

- juicy

- tender

- more nutrients preserved

Complexity acts as a hedge against poor quality underlying assets.

If the collateral is prime, the yield on simple preparation maximizes.

Marinades are merely volatility suppression for inferior inputs. Focus on the core capital.
