You see what your relays allow you to see. The relays may have the ability to gossip to other relays that you’re not using so others can see your notes without sharing the same relay. You certainly want a few relays for redundancy but I believe it’s more about the quality of the relays rather than the quantity.

There's no defined answer to this. I think you need to experiment with them a little and see what works gor you.
