Lemon Honey Marmalade

ingredients: lemon, honey, sugar

this marmalade is a balance between sweet and tart. we like to eat it spread on toast with butter or mix with water for a tasty lemonade. it would make a great filling for cake too. so many possibilities!

I make this using lemons from our tree. it got a big trim recently since it was overgrown so we have a huge surplus of fruit. After filling, the jars are canned in a hot water bath which allows it to be shelf stable outside the fridge if unopened.
