dice that steak and and eat it, can freeze before and let thaw a bit to make dicing easier, add an egg and garnish with salt, pepper, olive oil, balsamic if you’re into all thar
No idea about temps I just burn the shit out of all steaks.
Ground I just use like beef.
Fyi, if it doesn’t say pasture raised, grass fed & finished it is just a corn fed snicker finished confined feed lot bison/cow crossbreed. Just a basic steak in a manipulative package.
Grate and salt an onion, press it in a strainer in order to get the juice out, use the onion pulps with black pepper and paprika,a bit olive oil, add to the ground meat and blend well, make a burger out it.
For the stake , let it get aged a bit in fridge about two days atleast, pound it well, lots of black pepper, and sizzle it with butter, rosemary and little cumin powder on cast iron.
