I don't understand, why just make payment directly in bitcoin or LN?

If the fee is high, use LN, simple.

I don;t think people are using wBTC for the fees, they're trying to earn a yield on these various liquidity pools or borrowing against it to get stablecoins

Lol not a guarantee that they'll get it back, so many pitfalls, impermanent loss from liquidity pools, MEV sniping, redemption risk, the list goes on
