Currently using mason jars with great results and virtually no loss of alcohol over 2 years in jars…
Handling and storing the amount I may try to scale up to though will become an issue even using 1/2 gallon ones…

Tricky. A pail with the lid you showed will be good, all you need to do is improve the seal? Could you clamp, providing pressure to the silicon seal. Wax it, or clingfilm on top? Those lids only didn't work for me due to the pull off design, some have grippers which are better

If you put the mason jar inside that steel jug and put the steel jug inside your milk crate, I think you have a optimal solution to prevent air leaks.
