Curious what gets done with the arugula. Cacio e Pepe is always good shit.
I probably need to find a good way to have it with meat as that's the number one thing stopping me from making it. Not remotely full carnivore but I do try to get a good chunk of my nutrition from meat.
I added prosciutto! And the arugula just kind of wilts at the end hahaha
I do love prosciutto. Though I sort of think of it as a meat-based "herb" rather than meat itself, unless I'm really gorging on it. More there to accent flavor than really provide a decent chunk of protein.
I suspect serving cacio e pepe alongside something like chicken saltimbocca would scratch my meat itch though.
