The best resource. I suggest starting with tonkotsu w/ a shoyu tare because I like it. Cooking time for a paitan type soup is > 1 day. Use a pressure cooker to speed up. I like to do most of the prep the day before and then its just assembly at meal time. NGL, it's a lot of work, but you get plenty of the soup to freeze and save (8 or 10 servings). Just have to make Noodles and toppings for next time. I find this well worth it and the result is on par or better than restaurants.
