I totally support their intentions, and commitment to open-source, but when it comes to functionality and the real-world experience of using the keyboard, it just isn't on the level of SwiftKey. A keyboard is something fundamental that needs to feel good while using, and FUTO just isn't there yet.

I haven't actually tried the FUTO keyboard yet, i'm slacking a bit. But SwiftKey isn't the one. It glows way too hard.
It's a very nice keyboard with a lot of great features. And maybe it's just that I've been using SwiftKey so long that I'm really accustomed to it, but the actual typing experience is, in my opinion, significantly superior to FUTO. SwiftKey is a lot more forgiving, and since it learns your typing style and words, its suggestions and autocorrect are a lot better. I've been using SwiftKey for probably 10 years, before they were acquired by Microsoft, so it knows me very well.
Fair enough, each to their own 🤷🏻♂️ I'm a libre>efficiency kinda guy, and I despise any tech that calls home or leaks my personal information. Although there is a line 😅 for example, for personal affairs I always try the libre route first. When it comes to work and time critical tasks then maybe I'll opt for the non libre, more efficient tool. But the increase in efficiency needs to be like 5X for me to consider the non-libre option, unless there is some specific work task where libre is non-optional of course 🤷🏻♂️
I'm very careful to eliminate any telemetry. I block all the addresses that SwiftKey uses to phone home so there's no communication between my keyboard and the host servers. This technique can be used with most apps to kill any telemetry that may be employed.

It's pretty easy with a good DNS blocker. I use personalDNSfilter. You can block entire domains, of just specific hosts. It's got a console that shows you all the requests that happening in real-time so you can launch an app, and watch the console to see all the hosts it's contacting. What I do is start off blocking them all, then I carefully unblock one by one to arrive at the perfect config that allows the proper functioning of the app while blocking all the unnecessary shit.
