Btw my wife and I keep talking about doing the Caminho de Santiago but still havent done it. ... we always say next year and it never happens

Do it, it is truly a wonderful experience, specially for the faithful. I would advise you to take the “caminho da costa” , it is easy to walk and the scenery is lovely .
