Because of addiction to carbs. Slowly you can get rid of that. Intermittent fasting and later normal fasting helps. I know because I was addicted too.

Yeah but it’s complex enough that the body breaks it down in a balanced way, especially mixed in with the rest. No insulin spike etc etc
