The more relays the more people you will meet but uses higher resources

Probably, depending on how big relays get, you will start getting overlaps I think

Yeah, it seems like some will dominate and then there will be some for special use cases

I'm at ~24, usually some have issues connecting, so I'm left with ~22. But I tried at 11 and it was good but seemed like I was missing data, and I was, having more relays seems to allow you to pull more data or see more data maybe, I'm not sure. Probably stuff they're working on improving. One of the relays I'm on aggregates 10 other relays, those will probably be more popular too, connect to 10 but have connectivity of 100 maybe
