The beans were purple beans from Joyous Gardens, but like many purple green beans or purple cauliflower, lost their color in cooking. If anyone wants to recommend varieties of these vegetables to grow that retain their purple color when cooked, please let me know! I know I’ve heard of some and would love to grow them / make a color-retaining landrace when I have land.

If you squeeze lemon juice on them, they keep a lovely pink colour. Works well with purple cauliflower. Either pickling or lemon juice and olive oil if roasting.
