Though do make sure you are not using stock keyboards such as Gboard, or stuff like Grammarly and SwiftKey which can act as keyloggers or otherwise leak data

I generally use AnySoftKeyboard. OpenBoard is another good choice.

FlorisBoard hasn't had official updates in ages but beta builds are still worked on:

I know there are others too. Some also use a real keyboard app and disable Network access.

OpenBoard is my favorite.

OpenBoard fork will rename to HeliumBoard or something soon to differentiate between the two. The FlorisBoard UI is better imo but OpenBoard is more functional.
