If someone had a stack that was all KYC that they wanted to anonymize, how would they achieve this?

The kyc does not disappear, it is in some database that sooner or later the government will have access to. You can anonymize those bitcoins so that they are not traceable and can not be proven to be yours, but with KYC and tax legislation is another matter, who knows what the government will come up with.
