I would add to the list Seacrow Island and Ronja by Astrid Lindgren.

What are your favorite off-the-beaten-path books to read to your kids?

I love Lindgren for how she packages profound life lessons in children's books. Ronja is a masterpiece so is

"The Brothers Lionheart" by Lindgren. It's one of her most profound and perhaps most philosophical children's books.

Be prepared - even adult readers find it deeply affecting. I still have to cry every time I read it.
