You could be selling nucs at the same price point and it would serve them far better. A modified chromebook/thin client could even work since you’re willing to do the setup for the end user.

Rpi's are plenty powerful but they don't come with an interface. Glue one to the back of a magic mirror touch screen and that would be a cool product.
