Originally they were brought to europe as an ornamental flowering plant. Most european didnt accept them as a good source of food for many decades. The irish were the exception...
What zone are you in. Under 3 i presume with your cactus photos.
They look thirsty and hot (curled up leaves). May want to consider mulching around ?
They're in an exposed area with no installed irrigation. We're planning on just harvesting for genetics until we can get a better place. Mulching would have helped, but I think they would have needed more shade too.
