What is your opinion on open carry vs concealed carry? I'm thinking of doing open carry for better comfort and maneuverability.

I like having the option of concealed carry, but I genuinely don't give a shit and open carry most of the time. It's just more comfortable.
Open carry for your own comfort makes everyone around you uncomfortable and you attract more of the attention you're trying to avoid.

If you have a good holster the difference in my experience is negligible, but I don't want average Joe knowing I'm strapped. Be the gray man.

Three reasons against open carry out in the public:
1. The vast majority of defenders do not understand how to retain their weapons when an attacker ambushes them to take the gun. So they themselves become a holster for someone else to use. I wish everyone trained jujitsu but most gun owners do not. (I strong encourage my students to do so).
2. It draws unwanted attention to you from LE, citizens, and criminals. Unfortunately, we live in a society that scares easily. I have answered many 911 calls to a “man with a gun” call only to arrive and find someone who is just open carrying. At that point I have a duty to at least make contact with that individual which would always put me in an uncomfortable situation and the individual in an inconvenient one. Not all cops hold the same views on the 2nd amendment as I do. So your experience may vary as to what reaction you will get from LE when that call comes in.
3. Carrying a firearm for self defense is mostly geared to the reactionary, not the proactive. A serendipitous draw is a proven technique that is vastly more difficult from an open carry rig. Tactically open carry from a self defense standpoint is not as advantageous.
Look at it from the perspective of the "bad guy" you could hypothetically stop from harming innocents.
If the bad guy sees a guy open carrying at the place where the bad guy is about to cause some mayhem, assuming the bad guy isn't there simply to commit suicide by return fire, assuming the bad guy is there for some violent objective, assuming the bad guy has a functioning brain, one might expect the bad guy to shoot the open carrier first and then go take the open carry gun, increasing their own fire power and ability to accomplish their objective(s).
If the bad guy sees a guy wearing a bunch of NRA apparel or USCCA apparel or camo stuff or whatever, the bad guy might also assume that this person is concealed carrying and again might take such a person out first before further pursuit of their objective(s).
A person wearing plain clothes that don't attract attention who is concealed carrying well (no printing) is likely to blend in with the sheeple, hence the "sheepdog" moniker adopted by many concealed carriers.
