Now using iris.to and it seems to be the best one so far. Everything is working. Is there an optimal number of relays one should use? Is it better to have more relays or is it detrimental?
Around 10 seems to be just fine.

Where can we find more relays to add? Is there a directory? I'm also using the defaul 10 relays provided by Iris.
