That cut can be hit or miss. But when it has a nice marbling and itโ€™s dry-aged ๐Ÿ‘Œ๐Ÿผ rib-eyes are great, but sometimes you get big chunks of fat on the middle that Iโ€™m not a fan of

True but marbling is key. Not many enjoy a mouthful of fat
