Everyone with an iCloud+ subscription already has a feature that gives them unlimited anonymous forwarding email addresses. If you have it, use it, or find an equivalent. SimpleLogin.io is another option I’ve had recommended.

Been using nostr:nprofile1qqsg8luvm59fn9qcdg0ccsezdxwnqdaa8h4mr07kk48ht2jezhznmvspzemhxue69uhhyetvv9ujuerfw36x7tnsw43z7xmffjc for this reason, along with the ability to encrypt emails.
