Not better, in fact it's worse.
A hw wallet like cold card can operate air-gapped.
You can use Bluewallet to watch all your wallets on your Coldcard. Using BIP85 on the Coldcard makes the need to backup all your wallets' keys redundant.
I highly recommend a Coldcard instead of a mobile phone. Don't forget that the battery on a mobile phone has a limited lifespan.
the idea of a hwwa is, that your keys NEVER EVER get in touch with the internet. So you EXCLUDE the possibility, that someone could access them from remote.

His take about the security being only "can they break into my phone" is mostly true but he didn't really explain how you go about signing using those wallets together.

Also didn't mention how to go from custodial to non custodial which has a number of hoops to jump through
interesting.. would love to hear why 2 of 2 instead of for example 2 of 3 though.

Definitely do not agree, this doesn’t make any sense, how can a software wallet installed on a phone that has access to the internet (to sign you will need it to be online) be better than an air-gapped signing device, it can’t be. With the setup in the video not only you have more attack surface, but you also have a much larger possibility of screwing up when someone actually needs to move the funds.
