I need a -20 dB button on my remote.

Dialogue volume is so much less than environmental/SFX volume in movies that come to streaming services.

Why? Is remastering to normalize the two really so hard?

The experiences are done entirely on purpose

In a theater setting I get it but at home I have to ride the volume to hear the dialogue and then get blown out on explosions and shit.

Are films remastered for streaming?

Too many variable at play. The original audio of a film will have been mastered to a specific standard, but what happens from the streaming service to your loud speakers is subject to endless combinations of issues. From bandwidth and dropped packets to DAC processing and loudspeaker type, design, and implementation.

That said,

I do miss the -20db options that used to be on most analogue receivers.

Just bad on the streaming service.
