I plan on doing it via Umbrel. Do you think itโ€™s a good idea to run my home server on the same Rasperry Pi that my Node and Relay are running on, or would it be smarter to set up one device for Node and Relay only?

If you're storing a large amount of btc I don't personally recommend umbrel since it's still in beta and not considered secure. This is noted in the github repo here: https://github.com/getumbrel/umbrel/blob/master/SECURITY.md

What would you recommend? And where can I start to understand all the technicals on the software engineering side of Bitcoin as a complete beginner when it comes to that topic?

Just start with something simple and run bitcoin core on a raspberry pi. Instructions are on the bitcoin website here: https://bitcoin.org/en/full-node#what-is-a-full-node
