Why did you have 2 USBs plugged in?

Are you installing Ubuntu server or the GUI version? It's unrelated to your problem, I'm just curious.

I ended up running boot-repair and got the following message: NVram is locked. Please disable secure boot in BIOS. So I'll give that a go tonight.

I couldn't manual partition without unmounting the live USB but that's not possible because it's the bootable device? No idea what I'm talking about 😄

You should be able to figure out how to disable secure boot in your bios.
